Good dinner idea

Since the guys were going to work on the porch roof, I offered to help take care of the meals. I decided that for Friday night, I'd make a grilled chicken breast that my dad had done for me a month ago. It was received with rave reviews, so here's what I did:

Marinade
two parts olive oil and one part vinegar (I used apple cider vinegar)
I think I used one cup olive oil and half cup vinegar
two cloves chopped garlic
salt, pepper, chopped bay leaves (just a bit)
splash lime juice

I mixed up the marinade in a plastic container, transported it to Phoenix. Then when I got to the house, I threw the marinade in a large plastic bag with split chicken breasts. I left the chickens in the bag for almost two hours.

After leaving the chicken in for a couple hours, I fired up the grill. Then I took the already split chicken breasts, added sun dried tomatoes and used toothpicks to keep the sun dried tomatoes in the chicken. Then I threw them on the grill and served. Boyfriend made rice, and heated black beans and corn to go with the chicken.

The chicken came out tender and juicy. The sun dried tomatoes were tasty. And it all went nicely with the black beans and corn. Boyfriend wasn't sure if he'd like sun dried tomatoes, and boyfriend and his dad aren't big chicken fans. They both thanked my dad for giving me that recipe because they really liked it.
